Prepare sauce: In a small sauce pan add brown sugar, tamari or soy sauce, water and bring just to a boil. Reduce heat and continuously whisk until mixture begins to reduce and thicken. Remove from heat, then add the miso and Hoisin, whisking until smooth (avoid boiling miso as it will delete the nutrients). Set beside the wok to add to stir fry later.
Have all ingredients prepared and placed beside wok before you begin stir fry.
Heat your wok or frying pan until hot. Pour in oil and immediately add ginger, garlic, sliced white part of scallion. Quickly stir for just 3 seconds with a wooden spoon. Keep stirring to keep vegetables moving.
Add carrots, toss (15 seconds).
Add red bell peppers, toss (15 seconds).
Toss in greens and continue to stir fry just until they begin to wilt.
This would be the time to add any other veggies you choose to stir fry.
Take off the heat. Stir in the soy miso glaze.
Stir in toasted sesame oil and scatter sesame seeds over top( check for seasoning). Serve immediately.
